"PAPAS CON MANI"

Prep time: 25 minutes
Total: 35 minutes

Ingredients

1 pound of golden potatoes
1 small onion, finely diced
2 cloves of garlic, minced
1/4 cup aji amarillo paste or medium-spicy chili paste
1/2 teaspoon salt
1/2 cup real peanut butter
1/4 cup evaporated milk
2 hard boiled eggs, halves

Instructions

1. Boil the potatoes whole in salted water. Drain and cool potatoes. Peel and slice in halves. (These can be prepared a day before.)

2. Saute onions in a skillet coated with cooking spray until softened. Add the garlic and aji amarillo paste, stirring frequently. Add water, a tablespoon at a time, as needed to keep sauce moist.

3. Stir together peanut and evaporated milk. Pour into the skillet, stirring constantly until all ingredients are combined.

4. Place potato halves over some whole lettuce leaves. Pour peanut sauce over potato halves.

5. Serve with hard boiled egg halves.

This is one of the many ways you can prepare this recipe.

Peanuts in Peruvian Cuisine

Peanuts are common ingredients
in Peruvian Creole cuisine reflecting the marriage of native ingredients and ingredients introduced to Europeans. In one example peanuts are roasted along with hot peppers (both native to South America) and blended with roasted onions, garlic and oil to make a smooth sauce poured over boiled potatoes. This dish is especially famous in the city of Arequipa and is know as "Papas con Ocopa". Another example combines a similar mixture with sauteed seafood or boiled and shredded chicken in the form of a fricassee. There dishes are generally known as "Ajis" such "Aji de Gallina" (which i will be posting the recipe for this another time)

During Colonial times, the Spanish in Peru learned to use ingredients like peanuts in substitution for nuts which were unavailable in Peru. It is well documented that Spanish cuisine makes extensive use of almonds, pine nuts and other nuts, in ground or paste form, combined with rice, meats and vegetables to create dishes like Rice Pilaf. However, almonds, pine nuts, chestnuts, walnuts, etc. are too expensive or unobtainable in some parts of Peru. Peruvians have adapted by using nuts native to their region such as peanuts.

Although the peanut is not a nut, it may be argued that the Conquistadors used peanuts along with local Peruvian ingredients to emulate their ancestral cuisine in the absence of expensive almonds, chestnuts, walnuts and pine nuts. I will be posting Peruvian recipes in the weeks to come.

Aspiring Mask

Hey Everyone.

Here is some information about the benefits of doing an aspiring mask once or twice a week.
An aspirin mask will save you lots over some of the most expensive and popular ingrown hair, blemish and redness removal products. How? Aspirin is commonly one of the active ingredients to get rid of the redness and the bumps because it contains salicylic acid, a powerful exfoliator to polish off dead skin cells; allowing the ingrown hair to release.

Salicylic acid's deep exfoliating action can take moisture along with it. Unless the skin is dehydrated of lacking water, oily skin types should be okay mixing it with water. Otherwise you can add Jojoba oil, a vegetable oil closest to the sebum oil that humans produce, to help replenish lost moisture for normal to dry skin.

Honey is not only sweet to eat but has a natural hydrating, antimicrobial, antiseptic and antibacterial properties. Honey in the recipe will help ward off bacteria so the area doesn't become infected, moisturize the skin and reduce swelling. All very much needed.

When and Where NOT to use:
If you are allergic to any of the mask ingredients or salicylic acid, if your pregnant, breast feeding or have any medical condition that has you avoid aspirin.

An area that has been waxed or had a salicylic acid, glycolic or an enzyme product applied in the last four days.

Irritated. inflamed, cut or sunburned skin should also be avoided. This is only a reference guide, please check with your doctor or dermatologist if you have any questions!

Mask materials you will need:

- Regular non coated aspirin.
- A small container to mix your mask in.
-Honey, aloe or moisturizer for the face.

Step 1
Place 2 to 3 non coated aspirin tablets in your small container. Place 3 drops of water on each tabled so they start disintegrating. (Don't add too much water or else it will become to mushy and watery and wont work.) They will automatically dissolve in a few minutes.

NOTE:
The texture of this should be grainy like sugar.

Step 2
Once the non coated aspirin tablets have dissolved, add about a tablespoon of honey or moisturizer to the dissolved aspirin tablets in your container and mix.

Step 3
Apply the mixture to your face and neck avoiding the eye area at all times.

Step 4
Wait 10 minutes. Then rinse the mask off in a gentle circular motion. This is a great exfoliating mask so take advantage of it.

Step 5
Tone and moisturize with your favorite products. I like to use the Khiels calendula toner and Khiels Ultimate facial moisturizer.
This mask exfoliates dead skin cells on the face leaving it radiant and glowing. It also minimizes redness and blemishes. You will notice and improvement to your skin right away.

Use this mask no more than once or twice a week as your skin will grow tolerant.
